PREPARING A CHICKEN TAGINE AT KASBAH DERKAOUA

Recipe for chicken tagine from Kasbah Derkaoua

Pour olive oil in bottom of tagine


Add two chopped red onions
Top with thickly sliced brown/white onions
Top with 10 chicken pieces

Then add 2 sliced tomatoes
Add 2-3 thickly sliced potatoes
Add more sliced onions on top

Sprinkle with:

1 tsp cracked pepper

minced garlic

1-1/2 tsp powdered ginger

1-1/2 salt

1-1/2 paprika

1-1/2  cumin

1 bunch coriander chopped

1/2 cup flat leaf parsley chopped

1/2 preserved lemon sliced finely

Add a good dash of water 

Put lid on tagine (can cover with foil first)

Place on stove top.

Bring to simmer and cook 1/2 hour for chicken, longer for beef
