PREPARING A CHICKEN TAGINE AT KASBAH DERKAOUA
Recipe for chicken tagine from Auberge Kasbah Derkaoua, Erfoud
Pour olive oil in bottom of tagine
Add two chopped red onions
Top with thickly sliced brown/white onions
Top with 10 chicken pieces
Then add 2 sliced tomatoes
Add
2-3
thickly sliced potatoes
Add
more sliced onions on top
Sprinkle with:
1 tsp cracked pepper
minced garlic
1-1/2 tsp powdered ginger
1-1/2 salt
1-1/2 paprika
1-1/2 cumin
1 bunch coriander (cilantro) chopped
1/2 cup flat leaf parsley chopped
1/2 preserved lemon sliced finely
Add a good dash of water
Put lid on tagine
Place on stove top.
Bring to simmer and cook 1/2 hour for chicken, longer for beef
